Brewer needed


Fruit juice concentrate causing refermentation

We make a Berliner Weisse and add fruit juice concentrate to the Brite tank before racking beer on top.

We Sold and Served several batches of this beer on draft. Now we are canning it and I'm concerned that the juice May cause refermentation in the can. We don't filter, but I'm considering using a stainless trip clamp gasket filter during the transfer. Anyone have recommendation to make sure the yeast is absent or will not be able to referment after packaging?

Hello All

We are now the proud owners of a small Cask SAMS unit we bought used, for our little tiny brewery here in Truckee CA !!

Can anyone chime in and help me find bright cans - 12/16 oz

small quantity, plus lids, boxes, and 4/6 pack snap on holders

We have a nice bottle line and a pressure sensitive label machine that we already used once to label some beer a mobile can line packaged for us, so the labels look great on the cans we already did, I just need a place to buy cans!

Cellar Technician

PURPOSE: To be responsible for maintaining and executing all cellaring functions in accordance with policy and procedure, safety requirements, and best practices to ensure the highest quality beer.

RESPONSIBILITIES:
• Execute Standard Operating Procedures (SOPs) for each phase of fermentation, clarification, carbonation and packaging.
• Clean and sanitize all equipment and work areas
• Maintain equipment that cools and adds yeast to wort to produce beer
• Starts pumps and turns valves to control flow of refrigerant through cooler coils to regulate flow of hot wort from tank through cooler into starting tank
• Controls specified amounts of air into wort
• Provide support to brewing operations
• Maintain accurate records and thoroughly document notes
• Assist in yeast handling and fermentation management
• Communicate with Maintenance and Quality Departments as needed
• Follow all safety standards including safe chemical handling and sanitary equipment maintenance
• Proper use of Personal Protection Equipment (PPE)
• Daily use of computer inventory software to ensure raw material availability
• Provide a safe and clean environment for brewery tours, events, and employees
• Other duties as assigned

REQUIREMENTS:
• Minimum 1 year of professional brewing experience in a production brewery preferred
• Fermentation Science Degree or related four-year degree preferred
• Comprehensive understanding of brewing science, brewhouse, and cellar operations
• Computer and math proficiency
• Obsessive attention to detail and record keeping
• Ability to work well in a team environment and independently
• Passion for the brewing process and beer
• Innovative ambitious, driven yet caring and dedicated

Vet. Brewer/Tap Room Manager for Hire

Hey everyone,

My name's Ty and I am looking for a full-time brewing/tap room position at a brewery. I am willing (and wanting) to re-locate to almost anywhere. I run a 3.5 bbl brewhouse in Northern California right now where I am the brewmaster as well as the Tap Room Manager. I have my brewing degree from Siebel, am an active member in the local homebrewing club, very engaged on online homebrewing communities, started a company (Waters Brewer) revolving around the homebrewing community, and fully emersed myself in the brewing industry. I also do a study of 30 batches of IPA recipe, only difference from batch to batch is the water chemistry. I'm writing a book with about 50 pages written already about everything I'm learning through these experiments. I also have a blog and podcast you can read or listen to.

How do you treat your water?

I'm still in the start-up phase of my brewery - so no commercial equipment yet. However, when I had a 10 gallon, and now that I have a 1BBL homebrew setup, I have always treated all of my process water per the beer style I am going for. For me, it has always been rather easy, as I will take a sample of strike water, do my calculations, add the salts/acid to the sample, and mix the sample into the HLT / MT / BK.

On commercial systems - is there any particular equipment or methods that you use that are effective? I am thinking mostly for the HLT - considering that the MT is pretty easy to treat - the sparge water is less convenient in a commercial setup. I know a lot of operating breweries, A LOT, that do not treat their water. Although I will never understand why this corner is cut, I admit I am sure it takes more time and effort to do it in a commercial setting.

Mash Hopping?

Curious if anyone has done any mash hopping? I was reading that article that Jamie from Dell brewing wrote (http://www.probrewer.com/library/stu...se-operations/) and was wondering what kind of results occured if you have tried it. I'm thinking my next test batch it's gonna happen! How did you go about it? Can you calculate the bitterness? Any thoughts on the process?

Two head counter pressure Bottle Filler for sale

I have a two head bottle filler for sale.

HDP Deluxe Filler/Crowner Model DFC2

We purchased this machine new approximately 3.5 years ago. We are a canning brewery so we don't produce enough bottles to hold on to this unit. This filler functions fine but does require a familiar operator.

The filler purges the bottles and pressurizes with CO2 and then begins to fill the bottles with product. Automatically, the fill level is detected and the machine automatically crowns the bottles. This machine can do practically any production-sized bottles. We've done 22oz and 750ml formats, but with the purchase of bottle specific bases from the manufacturer, 12oz, 500ml, etc. can be filled. These bases change out easily. Included are the 22oz bottle format and 750ml bottle format.

We always filled off of a fermenter or brite tank, but we've been told you can operate and fill bottles from a keg. We fill about 16-18 cases an hour when dealing with 2.6 CO2 vols beer; faster but never measured with still beer for bottle conditioning. No sours, brett, or wild beers were used on this machine. All batches run through the machine were tested clean.

New units include a color touch display, but this one uses an LCD display with keypad.

Utilities requred:
120V AC circuit
Dry air supply at 90psi
CO2 supply at 30-50 psi
1.5" triclover product supply.

Disclosures:
Machine has been cleaned with Bar Keepers Friend and has buffed stainless exterior (as opposed to rolled/brushed stainless)
New needle valves are recommended but current valves work with experienced operator
Capping on foam is operator driven via settings on LCD and needle valve adjustment
Crown guides are not present, but we found them optional (easily replaced via manufacturer, snap on plastic piece)
CO2 regulator not included - air regulator is

Hop addition question

I have a 90 minute IPA that gets a big addition at 90 and then a smaller addition at 45, then another big addition at flameout. My question is: Can I shorten the boil to 60 minutes and do a first wort addition? How much will this affect the hop character?

Job Description - Cellarperson/Delivery Driver
Reports to: Assistant Brewer and Distribution Manager

Description Summary:
Cellarperson/Driver is responsible for cleaning and sanitizing tanks/kegs, as well as transferring beer from tank to keg, loading and unloading the delivery van, safe operation of vehicle, maintaining positive relationships with accounts, picking up all empty kegs and returning product from accounts, properly adjusting invoices to reflect credits, and providing unparalleled customer service. The Cellarperson also cleans and sanitizes product lines and other equipment, and maintaining the organization and cleanliness of the brewery cellar area. Other duties of the Cellarperson include but are not limited to: cleaning the floors, outsides of tanks, miscellaneous parts, floor drains, filtration equipment, Brewer's office work area, cellar racks, and containers.
The Cellarperson/Driver should expect to work a minimum of 30 hours per week, with the expectation that the workload will increase as our brewery continues to grow. This position is paid hourly with the opportunity for additional hours and is supervised by the Assistant Brewer and the Sales and Distribution Manager and overseen by the head brewer.

Duties and Responsibilities:
Coordinate with the Distribution Manager and release beer to packaging when ready.
Load and unload delivery van with packaged beer assigned to accounts.
Collect empty kegs and properly adjust credits.
Provide excellent customer service.
Keep truck clean inside and out.
Perform beer transfers, carbonation, filtration, carbonation, and packaging.
Fermenter, brite tank, brewhouse and keg washing and sanitizing.
General brewery support as required.
Maintain a safe working environment which allows us to work cleanly and produce great beer in an environment with minimal stress.
Assist in the cleaning of all the brewery areas and the washing of equipment, floors, and tools to comply with company and government sanitation standards.
Work beer festivals on several weekends per year, typically full-day Saturdays, which includes preparation (on Friday), truck loading, driving, and unloading Saturday morning, setup and staffing of the BHB booth, pouring beer for festival attendees, and pickup, driving, and unpacking/cleaning at the brewery Saturday evening.

Requirements:
Consistently lift and carry 10 pounds and occasionally lift and carry 70 pounds to chest height.
Ability to handle product generally weighing 0 - 165 pounds.
Frequent bending, stooping, pushing, lifting, kneeling and reaching.
Must be able to stand for the entire shift, up to ten hours.
Consistently able to use repetitive hand and wrist motion.
Work with hot, cold and hazardous equipment and materials.

Maintained a safe driving record for past 3 years.

Ideal applicants will have experience brewing beer, whether professionally or through amateur home brewing.

Applicants must seriously love beer, and be excited about working in the beer industry. We absolutely love what we do and we're passionate about our products, and you should be, too.
