Hey everyone,
I'm using a few of the drums I have pictured as fermentation tanks. Currently when I transfer out to kegs I am opening one of the bungs and using a self priming diaphragm pump. It has generally worked, but I don't like the idea of leaving them open during the time it takes to transfer. They don't hold pressure too well so a sealed transfer with co2 isn't really possible. Wondering if anyone has any tips or experience with these they can share.

Hi,

I am looking to move back to the East Coast, preferably in the Carolinas area. I have been brewing professionally for 5 years in both brewpub and production facility operations. I have also completed the Master Brewer Program at the Siebel Institute in partnership with Doemon's Academy in Munich. I am well-versed in producing high quality wort on a variety of brewhouses and overseeing fermentation processes to create high quality beer. I can manage production schedules, purchasing, brewery finances, and any other relevant brewery operations. I have trained multiple assistants and new brewers on all aspects of brewing and cellaring and am more than willing to continue to do so.

My ideal brewery setting is a brewpub focused on delivering a core of 4-6 simple, approachable, and well-executed beer styles to the customer along with a number of rotating one-off or seasonal styles to provide exciting variety. I do not mind coming into an established core of recipes, and I am more than up to the task of updating an established core to better suit the needs of the market. I am also willing and able to establish a new core of recipes in a new brewery.

Safale S-04 issue

Hey everyone,
I have been using S-04 for IPA for some time and it has always turned out great...except the last two batches. I am getting the same off flavor in both these batches-they are different IPAs but taste pretty much the same.
It is kind of like pineapple with something that comes off as slightly acidic.
Has anyone else experienced this, and if so, know what may be causing this?

Adventure Brewing Co is a small production brewery in Fredericksburg, VA with two tasting rooms. Our original location has a 3 bbl pilot brewhouse which releases new beers weekly and our production location has a 20 bbl brewhouse.

Adventure Brewing Co opened in Stafford County Virginia in May 2014 with a 3 bbl brewhouse. In January 2016 we expanded and acquired a local brewery with a 20 bbl brewhouse to increase production and distribution capacity.

The position is responsible for all aspects of brewing operations from cleaning to packaging and everything in-between with the help of an assistant brewer. Brewer will have wide latitude to create new beers on the 3 bbl pilot system and to scale them up if necessary. Brewer will be responsible for production scheduling to meet distribution commitments and tasting room needs.

Emphasis will be given to candidates with strong yeast management and microbiology background.

Requirements:
Degree in Fermentation Science, Business, or completion of brewing-science program
3+ years production brewery or brewpub experience minimum
Experience in yeast handling
A self motivated, outgoing, enthusiastic and success driven personality
Strong work ethic
Team oriented but also independently driven
Strong problem solving ability
Strong attention to detail and ability to document and follow processes
Good cleaning and sanitizing abilities
Must be competent with MS Office or Google Docs
Must be able to work at multiple brewery locations

Boiler Placement

We’re looking at a 30hp boiler for a 17bbl brewhouse with a 34bbl HLT. We’ll also be using steam for the keg cleaning machine. If we place the boiler in the brewery, does it need its own room? Right now we have it positioned in a row from wall to wall as brewhouse, HLT, boiler, mill room. The mill room pretty much has to be where we have it.

SUMMARY:
The Head Brewer will be responsible for production of our beers, monitoring brewing staff and overall execution of the brewing process from wort production to package. The ideal candidate will have strong personal leadership skills, communicate effectively, and go above and beyond the duties assigned, while contributing to a positive work environment. The candidate must be willing to work weekends, holidays and overtime as needed, sometimes 45 + hours/week. As Head Brewer, responsibilities may also include attending on and offsite events, and can require traveling. The position will report directly to Founder/Brewmaster.

WORK EXPERENCE:
3-5 years in production brewery leadership role. Formal brewing education from an accredited brewing program preferred.

Brewhouse operations: All responsibilities of wort production including milling, mashing, lautering, boiling, whirlpooling, knockout, grain out. Brewhouse CIP

Cellar-Related operations: Responsible for monitoring fermentation. CIP, cell counting, checking gravities, dry hopping schedule and procedures, yeast disposal. recording fermentations, reading BBT levels and recording, checking DO and Co2.
Packaging operations: kegging, keg washing, bottling, and canning,

Quality Assurance Operations: cell counts, pitch rates, gravity measurements, DO measurements, process sampling, yeast viability measurement, tasting panel.

Effluent process as it relates to the above operations. Maintain cleaning and organizing standards, daily record of activities accurately and legibly recorded.

PHYSICAL DEMANDS:

Physical working conditions are required within this position. Working in, on and around vessels and pipes under pressure containing air, CO2, water, beer, chemicals, steam, and hazardous chemicals is commonplace. Process temperatures vary from 2 C to 100 C, which causes varying ambient temperature conditions. Handling objects up to 100 pounds requires moderate physical activity occasionally and/or up to 50 pounds frequently.

Bay City Brewing Co. is a well established brewery and tap room located in Point Loma in the greater San Diego area. Founded in 2015, we focus on producing unique, straight forward, and delicious tasting craft beer for everyone to enjoy. We operate a 20 bbl brewhouse which includes 4 fermentation tanks and 1 brite beer tank.

We are looking for a full-time experienced Brewer to join the team at Bay City. This position would be responsible for all aspects of brewing: production, fermentation, conditioning, and general maintenance of the brewery. It is essential to be able to maintain a clean and sanitary brewing environment on a daily basis to avoid cross contamination.

Key Responsibilities:
- Intimate knowledge of classic beer styles as well as creative drive to innovate, push boundaries and produce new exciting work
- In depth knowledge of beer history
- Responsibly source the finest ingredients, develop recipes, manage raw materials, inventory control and ordering
- Obsessive attention to sanitation, sanitary practices and quality control.
- Yeast management: including ordering, pitching, harvesting and propagation. Monitor yeast cell counts during fermentation and conditioning: this includes sanitary yeast handling and ability to utilize lab equipment when needed. You must excel at troubleshooting and problem solving.
- Ability to work safely with hazardous materials including CO2, acids, caustics and sanitizers.
- A desire to be Bay City’s interface to the public. You should like people, enjoy answering questions and look forward to participating in events, giving brewery tours and brewing in public. We need you to create grow and tell our story.
- Be an exhaustive researcher and student of brewing, attend educational workshops; review professional publications; establish personal networks; benchmark state-of-the-art practices;
- Cellar tasks including CIP/SIP of fermentation vessels and brites, kegs, finished beer transfers, general cleaning, sanitation and sterilization techniques and beer tasting
-In depth knowledge on canning and bottling

Management Responsibilities

- Training brewing staff
- Ensuring OSHA compliance in brewery
- Work closely with management to meet budgets, develop production schedules, monitor costs, report on items necessary for management to track profitability, ensure State/Federal compliance and file all necessary documentation for reporting.

- Maintain detailed logs, including notes of inconsistencies, and perform required record keeping.
- Intermediate computer skills needed.
- Social media and PR requirements, must be comfortable in front of the camera. As we craft our story we will look to you to communicate it with print and broadcast media.

Job Requirements:
-2+ years of brewing experience.
-High School Diploma required.
-Associates Degree or greater in a science or technology-related field is preferred.
-Passion for beer and the craft beer industry.
-Knowledge and experience with Orchestrated Beer preferred
-Work safely and effectively to accomplish assigned tasks.
-Ability to pass a criminal background check.
