QA Technician - White Labs (San Diego)

Position Summary
The primary duties of the Quality Assurance (QA) Associate are to conduct internal and external audits, equipment validations, equipment calibrations, data analysis and reporting, quality systems maintenance, regulatory compliance, independent projects, and completing any support duties required. Additionally, this positon is responsible for ensuring staff compliance with standard operating procedures, maintenance of staff training logs and troubleshooting deviations from product quality standards.

Essential Functions and Duties
  • Utilizes data and task tracking system to plan daily tasks, audit internal procedures and review quality related customer concerns.
  • Writes and implements QA related policies and procedures.
  • Reviews various department SOPs for compliance and consistency with both internal and external policies and regulations.
  • Manages, monitors and executes a "plan, do, check, act" monitoring system on all internal operational SOPs.
  • Documents internal audits and other quality assurance activities.
  • Investigates quality related customer complaints and non-conformance issues and reports findings to approriate department(s) and management.
  • Develops, recommends and monitors corrective and preventive actions.
  • Identifies training needs and organizes training interventions to meet quality standards.
  • Coordinates and supports on-site audits conducted by external providers.
  • Stays up to date on current regulatory requirements and ensures company compliance.
  • Designs, conducts and performs designed experiments to improve internal processes.
  • Performs other duties as required


Necessary Knowledge, Skills and Abilities
  • Bachelors degree in biology, chemistry or other science related field.
  • 2+ years of QA/QC related expereince in a lab or manufacturing environment.
  • Knowledge of aseptic technique.
  • Ability to work independently and with minimal daily oversight.
  • Able to work cross functionally and build a team consensus to solving problems.
  • Ability to read and interpret scientific related periodicles and stay up to date on best practices.
  • Able to gather, interpret and present data in an effective manner.

SBA loan - has anyone done one?

All,

I have an established 3 year old 7bbl brewery and am looking to move into a larger space to grow our operation. Part of that is going to be financed through an SBA loan (hopefully).

My question is for people who have gone that route before. They sent me a spreadsheet which is extremely basic. They want me to fill out simple expense numbers for things like rent and utilities, and then income numbers like tap room pints and wholesale kegs. I filled it out, but the spreadsheet itself is absolute garbage. There's nothing industry specific about it and it feels like it's geared to someone opening a shoe store. Now they've come back and said they don't like my numbers, but I have no idea what the underwriters are thinking. I mean they never even asked how many bbls a year I'd be producing.

Is this common? For folks who have done this before, how in-depth did you make the spreadsheet? Did you end up with a useful document for your business or was it just a one time projection for the SBA? I'd also like to ask if you had to put up any external collateral to secure the loan as they want me to put up my house, which I'm not to thrilled about.

Sales Projections - opinions welcome on reasonableness

Looking for a reality check on this start-up scenario. We will be a 10bbl brewery with a pizza and salads only kitchen and taproom. We will offer 12 varieties of beer and limit our strictly limited food offering of artisan pizza and salads. Our location will be a 6000 sq ft warehouse style bldg with 70 parking spaces and a population within 5 miles of 77,000 medium to upper income demographics. 15 mile radius population is 720,000 people.

We will be open 7 days per week, average of 8 hours per day.

The closest brewery is 5 miles away. We are planning on having about 2500 sq ft of taproom seating (125 seats) plus another 50 seats on an outdoor patio area.

We plan on producing 600-1000 barrels in first year, selling vast majority through taproom at $6 per pints and growlers....very limited, if any self-distribution of kegs.

My forecasts have monthly sales at $70,000 initially and growing to $100,000 per month or more. (Beer + Pizza) I'm assuming sales to be 50% beer, 50% pizza. Our goal is to create a $1.2M - $1.5M revenue business with 30% Net Profit Margins. We think it would be manageable and a nice return on capital invested...and simple.

Does this scenario see, reasonable? Critiques welcome. Total investment is expected to be $525,000 (not including the building construction and land).

FV Temperature in Cone Section

I have 5 BBL FV's with one jacket that starts at the cone and goes most of the way up the side wall. I believe one jacket is the standard design for the smaller FV's. The normal glycol piping design appears to have the cold glycol coming in the bottom of the jacket and leaving out the top.

On a recent batch we noticed every time the temperature controller opened to cool the FV by about 2 degrees, all bubbling from fermentation would stop for a few hours.

This was strange so I did a test with water on an open fermenter. I found that when the glycol solution (at 40F) enters the cone section jacket from the bottom it cools the liquid in cone part of the FV to 55F. This colder liquid sinks to the bottom and the temperature by the temp probe will still show 68F. It's not until the whole cone is cooled to a low temperature, does the temperature controller close the glycol valve. The upper part of the FV will only be cooled slightly. After a few hours the FV temperature will average out.

Has anyone else found that having the cold glycol solution coming in from the bottom cools the cone section too much, while leaving the upper section warmer?

The Temperature probe is just above the transition from cone to straight wall. If the glycol enters from the top, this over cooling of the cone section does not occur. I realize if the fermentation is active enough this will not make much of a difference as the liquid will be able to mix, but if the yeast is fermenting in the cone section then it can be over cooled and become dormant, even though the average FV temp is 68F.

Physical/Mental demands and work environment:

There are some physical/mental demands that must be met by an employee to successfully perform the essential functions of this job. The successful candidate must have the capability to work well under tight deadlines and the pressure that comes from a high-workload. As our office is located on the second floor of an older building with no elevator, the successful candidate would be required to climb stairs multiple times per day.
