The Wolverine State Brewing Company in Ann Arbor, Michigan is seeking an experienced commercial brewer to join our production team as a full-time Brewer.

Company Overview: Wolverine State Brewing is a multiple GABF and World Beer Cup award winning brewery specializing in the production of both traditional and experimental lagers. Two-thirds of our annual production (currently ~2,800 bbls) goes out to wholesale distributors, with the other third being served on-site to our enthusiastic guests in our always crowded Tap Room. We seek to create a one-of-a-kind customer experience both in-house and in the market by producing unique, exciting lager beers with an unrelenting focus on quality and consistency. Position Overview: Our current Brewer has recently been promoted to the Head Brewer & Production Manager position, and we are looking for an experienced brewer to step into the full-time production Brewer role as soon as possible. The Brewer has primary responsibility for wort production, and also supports on the cellaring side with CIPs, transfers, dry-hopping and other responsibilities. This position reports directly to the Head Brewer & Production Manager. Scheduling flexibility is important, and there likely will be one weekend day required per week. We are ideally shooting for a start date on or before February 18.

Responsibilities Include:
• Brewhouse operation (mash, lauter, boil, whirlpool, knockout)
• Building grain bills and milling grain
• Running cleaning and sanitizing cycles on equipment
• Troubleshooting equipment issues
• Brewery maintenance and cleaning
• Recipe development
• Beer finishing processes (filtering, carbonation, transfers, dry-hopping)
• Completing brewhouse production paperwork
• Assisting in sensory evaluation and staff education
• Working closely with all other members of the production staff

Experience:
• 2+ years commercial brewery experience, including wort production
• On-the-job experience running, maintaining and troubleshooting boilers & steam-fed brew systems is a plus, but not necessary
• Some formal training in brewing or a related scientific field is a plus, but not necessary

Cellar person/assistant brewer in Chicago area and southern Wisconsin

I am a recent college graduate with over a year of production experience in three microbreweries in Illinois, all of which were 15-bbl brewhouses with 10-15 bbl fermenters and brite tanks. I have experience performing CIP cycles, transferring from fermenters to brite tanks, filling and washing kegs, monitoring fermentation, manually cleaning the brew house, and various other cellar tasks as well as wort production to a lesser degree. I also have some experience with maintaining and filling barrels at my current job. Besides my commercial experience, I have been homebrewing and reading as much as I can about beer and brewing for over four years. I'm incredibly passionate about the industry and am anxious to begin work in one of the biggest brewing centers in the country.
Currently I live and work in northern Lake County IL, and I am hoping to find full-time work in a brewery in Chicago or the Milwaukee area and expand my knowledge and experience in the industry. Feel free to shoot me an email if you have any questions or would like to see a resume!

Looking to use this yeast for the banana esters.
Wyeast suggests underpitch at higher fermentation.
Wyeast suggest 0.5 liters per barrel.


Anyone have any idea how much is an underpitch?
Im going to brew a 6 BBL batch and wondering what the correct amount of "underpitch" would be.
I want good banana flavor but I want my beer to attenuate as well.

Job Overview
This position is responsible for operating Baxter’s brewhouse and cellar equipment to produce quality craft beer to fulfill customer demand. Brewers work on a set schedule which encourages specialty in either wort production or cellar operations but need to have the aptitude and availability to do whatever task is required. Daily operations include wort production, yeast and fermentation management, dry hopping, centrifugation, bright beer production, and quality control work in accordance with Baxter’s procedures for safety, quality and efficiency. Brewers will also work on the pilot system to help develop new products and satisfy demand in the taproom. Assistance with marketing events will sometimes be required. The ability and willingness to work long (up to 12 hour) shifts on a rotating basis that includes nights and weekends is required, as is the ability to work both independently and as part of a team.

Desired Minimum Qualifications

• Forklift experience preferred
• Previous brewery or packaging experience preferred

We are in search of one insanely organized person. The ideal candidate will know every detail about how many bags of grain we have in house, how many are on order, how many cans of Graham Cracker Porter are empty, how many are full, and where they are located in various warehouses across Colorado at all times. The person who fills this role must love spreadsheets and processes. This person is responsible for ensuring that we have every ingredient at all times to make our beer. We make frequent adjustments to our brewing schedule so we need someone who knows what a final gravity is and when each beer achieves it. Problem solving and flexibility will be regularly required. This role reports directly to the Production Director and must interact with the production, sales, accounting and taproom teams across the DBC organization.

Position Responsibilities:

This position is based at our Canworks facility and is responsible for managing ingredients, production supplies, full goods, new product development timelines and merchandise inventories throughout the organization. Below is a list of many of the job responsibilities:

Maintain raw ingredients and packaging materials inventory within established boundaries
Efficiently manage bulk ingredients storage
Perform accurate physical monthly inventory counts
Create production schedules based on demand planning forecasts and historical trends
Achieve inventory targets using formal, established ordering policies and procedures
Review established production schedules to ensure established inventory levels are met while operating at the highest efficiency possible
Place purchase orders based on forecasting and seasonal trends
Follow all documented procedures and maintain vendor/documentation files as required
Reconcile and resolve invoice variances
Process all documents related to inventory receipts or credits
Create production splits based on review of distributor orders and current inventory levels
Manage taproom merchandise stock
Must be able to work independently with little supervision
Must be able to work effectively, professionally and relate well with others including colleagues, supervisors and individuals both inside and outside of the company
Manage timeline of new product developments. For example: Ensure marketing signs off on packing design before production deadlines

Performance of this role will be measured using KPIs such as:
Frozen Plan Attainment
Out of Stock incidents
Inventory Accuracy

The production environment is hot, cold and wet. The Logistics Planner must be able to stand and walk for periods of time in this environment. This position must be able to work OT, holidays and weekends when required.

Required Qualifications:
Experience in logistics, supply chain management or accounting field
Familiarity with inventory management or ERP software
Familiarity and experience with TPS or Lean Methodologies
Proficient in spreadsheet software such as Google Sheets or MS Excel
A passion for beer
Flexible schedule
Active drivers license and a clean driving record

-complete all paperwork

Regular Cleaning
Following established sanitation cycles and procedures, clean:
-drainage system under tanks
-floors
-walls
-equipment
-pipework
-vessels as requested
-return all tools to proper place at the end of each day
-complete sanitation paperwork daily

Inventory and shipping
-rotate stock
-stock cold room
-load product for shipping and assist on deliveries when requested

Packaging Responsibilities
-Kegging clean kegs following established procedure (ie. rinse-acid loop-rinse-purge-pressurize-test etc.)
-fill kegs as requested, label, inventory, and record
-follow all sanitary procedures and complete all sanitation cycles
-complete all paperwork.

Bottling
Prepare for bottling
-case makeup, labeling, and date stamping
-bottles to filling area
-work on line as requested
-clean up equipment and bottling area when finished
-assist with sanitation cycle
-follow all sanitary procedures and complete all sanitation cycles
-complete all paperwork

Brewery Operations
Ensure that Brewery is clean and sanitary through:
-following regular sanitation schedules
-maintaining a clean and tidy brewery by ensuring:
-all spent materials removed within 12 hours
-all garbage removed from the building daily and from property as scheduled
-all tools returned to proper place each day
-grounds cleaned.
Ensure that equipment is maintained through:
-following regular maintenance schedules
